Spanish soup and salad recipes
The healthy Mediterranean cuisine is probably best described by Spain's delicious range of soups and salads. The country's rich landscape creates a variety of fresh dishes, from hot and chilled soups brimming with natural flavour to seafood, fruit and vegetable salads. Soups are most popular as starters and they usually range from the warm and filling Castilian garlic soup to the cool and crisp Andalusian gazpacho. As most Spanish dishes, soups have different regional variations; depending on the area you can find meat rich soups to be the predominant meal, or vegetable soups to be served as a starter.
Salads are also extremely common in Spain and they are usually served as a side dish to another meal. The Spaniards make great use of their fresh produce to prepare delicious salads, such as 'ensalada mixta', 'ensalada Murciana' or 'ensalada Rusa'.
