When restoring the buildings, designing the kitchens and other interior spaces we have closely kept in mind the needs of our future guests. When on holiday it is, of course, not always necessary to find exactly that which one has at home. However, the question of quality remains the same. For all the architectural details and choice of pictures, Colin Glennie, a fervant architect and now Paradix-host, was responsible. The pale floor tiles, the white walls and striking touches of colour, ensure a fundamentally Mediterranean ambiance. The furnishing assures a high degree of comfort as do the beds. The assorted lingerie has been carefully chosen and the kitchens and their equipment should meet the needs of all cooks. And that which is most important for those on holiday, the southern light flows through the generous window openings. Clear coloured curtains and sun blinds ensure both shade and privacy.

There is the large garden. In the shade of century old plane trees or in other intimate corners, alone or in the company of fellow guests, one can read or chat, take a snack or drink a glass of one of the many excellent local wines. Olive, Eucalyptus, magnificent fig and many other shady trees and shrubs offer a wide variety of birds, shelter, food and ideal places to nest. According to the season, lavander, roses, oleander and an endless variety of ornamental plants provide an ever changing array of colour. Rosemary, thyme, sage, basil, mint and other aromatic kitchen herbs thrive in abundance either directly in the earth or in pots. There they await to be picked and employed with pleasure. For cooling off and pure enjoyment the swimming pool (12 x 6.5 m) equipped with a modern chemical-free sterilisation plant, takes full responsibility.

Are you interested to visit castles that were once Cathar strongholds, cathedrals, churches and monasteries? Would you enjoy exploring on foot or by bicycle, the sinuous path beside the Canal du Midi? Are you fascinated by broad expansive views of the sea and its sandy beaches, gazing at ships and visiting fish markets? Do you enjoy sports - tempted to hire a canoe - or undertake gastronomic exploration and discover fine wines? (Languedoc-Roussillon is an open secret for wine connoisseurs.)
